C &lsquo;est ce sirop de base qui va \u00eatre utilis\u00e9 pour lier la poudre de fruit sec, \u00e0 coller les fruits secs pour d\u00e9corer aussi.<\/span><\/p>\n<p><span style=\"color: #000000;\">Pour ce faire, il y a des \u00e9tapes qu&rsquo;il faut suivre \u00e0 la lettre pour avoir un bon r\u00e9sultat, je vous livre la recette originale de <a href=\"https:\/\/www.youtube.com\/channel\/UCWSg59pbtNWKxVaaiMPiEQw\" target=\"_blank\" rel=\"noopener\">Diwa Sweetness<\/a> avec de l\u00e9g\u00e8res modifications:<\/span><\/p>\n<p><span style=\"color: #000000;\">-Le <strong>fondant<\/strong>, je \u00ab\u00a0l&rsquo;ai fait maison\u00a0\u00bb, pour ceci on a besoin d &lsquo;un <strong>\u00a0\u00bb thermom\u00e8tre \u00e0 sucre\u00a0\u00bb<\/strong> et le recette d\u00e9taill\u00e9e suivra en bas. \u00a0mais on peut bien sur acheter le fondant \u00ab\u00a0pr\u00eat \u00e0 l&#8217;emploi\u00a0\u00bb dans les boutiques sp\u00e9cialis\u00e9es comme pour : les colorants alimentaires, thermom\u00e8tre, glucose fruits secs..etc . On en voit partout en Tunisie et tant mieux.<\/span><\/p>\n<p><span style=\"color: #000000;\">&#8211;<strong>Les fruits secs<\/strong>: J&rsquo;ai pris des fruits secs moulu finement (\u00ab\u00a0sp\u00e9cial k3aber\u00a0\u00bb)<\/span><\/p>\n<ul>\n<li><span style=\"color: #000000;\">J&rsquo;ai pris 600gr de fruits secs en tout en voulant suivre la recette a la lettre et pour varier les go\u00fbts : \u00a0200gr pour chaque type (amandes, noisettes et pistaches) \u00a0mais vous pouvez bien sur utiliser ce que vous voulez, que des amandes, plus ou moins de 200gr..etc ou m\u00eame 200gr d &lsquo;amande pour voir:)<\/span><\/li>\n<\/ul>\n<p><span style=\"color: #000000;\">-Il ne faut<strong> jamais p\u00e9trir<\/strong> <strong>la poudre d&rsquo;amande (ou autre fruit sec) avec le sirop<\/strong> mais juste essayer de rassembler la p\u00e2te rapidement avec les bouts des doigts sinon l&rsquo;amande va rejeter tout son huile, on ne peut plus former des boulettes, elles s&rsquo;effriteront. la p\u00e2te doit reposer avant utilisation dans des sacs ferm\u00e9s et au frais ( sac de cong\u00e9lation pour moi), au moment de l&rsquo;utilisation, si votre p\u00e2te est trop s\u00e8che ajouter du sirop, trop molle ajouter des fruits secs.<\/span><\/p>\n<p><span style=\"color: #000000;\">-Ajouter <strong>le sirop par cuiller\u00e9e \u00e0 soupe<\/strong> comme je l&rsquo;ai fait, on peut mieux contr\u00f4ler la consistance de la p\u00e2te ainsi, des qu&rsquo; un boudin lisse se forme, elle est pr\u00eate. \u00a0\u00a0<\/span><\/p>\n<h3><em><strong><span style=\"color: #000000;\">-les indispensables \u00e0 la cuisine pour cette recette:<\/span><\/strong><\/em><\/h3>\n<p><span style=\"color: #000000;\">Fondant *, le sirop de glucose**, thermom\u00e8tre de cuisson***.<\/span><\/p>\n<p><span style=\"color: #000000;\"><strong>*le fondant\u00a0p\u00e2tissier:<\/strong>\u00a0( une p\u00e2te dure \u00e0 base de sucre, glucose et d&rsquo;eau) , il faut juste fondre le fondant tant pour tant avec l&rsquo;eau et l&rsquo;utiliser comme liant, les boulettes tiendront longtemps et ne durciront pas. On utilise le fondant p\u00e2tissier aussi pour glacer les choux et \u00e9clairs. Le fondant maison se conserve au frais dans une boite herm\u00e9tique pendant des mois.<\/span><\/p>\n<p><span style=\"color: #000000;\"><strong>**Le sirop de glucose: <\/strong>glucide \u00e0 partir de f\u00e9cule de ma\u00efs, pouvoir sucrant moins \u00e9lev\u00e9 que le sucre, \u00a0il<strong>\u00a0<\/strong>\u00a0retarde la cristallisation et donne du moelleux, il entre dans beaucoup de recettes: sirop maison,cr\u00e8mes, glace et sorbets, confiserie ..donc c &lsquo;est important d &lsquo;avoir un petit pot \u00e0 la maison d &lsquo;autant plus qu&rsquo;il se conserve pendant des mois.<\/span><\/p>\n<p><span style=\"color: #000000;\">***<strong>thermom\u00e8tre de cuisson: <\/strong>Indispensable pour la cuisson de sirop, cr\u00e8me, glaces..etc<\/span><\/p>\n<p><a href=\"http:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/thermometre-de-cuisson.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-8668\" src=\"http:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/thermometre-de-cuisson.jpg\" alt=\"\" width=\"200\" height=\"250\" \/><\/a><\/p>\n<p><em><span style=\"color: #000000;\">Je tenais \u00e0 remercier infiniment, <a href=\"https:\/\/www.youtube.com\/channel\/UCWSg59pbtNWKxVaaiMPiEQw\" target=\"_blank\" rel=\"noopener\">\u00a0Diwa Sweetness<\/a> pour sa g\u00e9n\u00e9rosit\u00e9, la qualit\u00e9 de ses publications et je ne peux que l&rsquo;encourager \u00e0 faire plus et \u00e0 aller de l&rsquo;avant. \u00a0Je vous invite \u00e0 consulter sa<a href=\"https:\/\/www.youtube.com\/channel\/UCWSg59pbtNWKxVaaiMPiEQw\" target=\"_blank\" rel=\"noopener\"> cha\u00eene<\/a> et <a href=\"https:\/\/www.facebook.com\/DiwaSweetness\/\" target=\"_blank\" rel=\"noopener\">sa page<\/a>, Merci encore pour la recette, d &lsquo;autres suivront bient\u00f4t :)!\u00a0<\/span><\/em><\/p>\n<p><span style=\"color: #000000;\">Une derni\u00e8re chose: il faut s&rsquo;armer de <strong>patience<\/strong> pour lire ce \u00ab\u00a0post\u00a0\u00bb <strong>mais aussi<\/strong> pour la r\u00e9alisation de ces petites merveilles, elles doivent garder tj le m\u00eame \u00e9clat et la m\u00eame raffinement!! j&rsquo;ai fait de mon mieux alors soyez indulgents, je ne suis pas experte en la mati\u00e8re mais je m&rsquo;y applique ..:)<\/span><\/p>\n<h3><span style=\"color: #000000;\"><em><strong>1- Pour la pr\u00e9paration du \u00a0fondant blanc\u00a0p\u00e2tissier:<\/strong><\/em><\/span><\/h3>\n<p><span style=\"color: #000000;\"><strong>Ingr\u00e9dients:<\/strong><\/span><\/p>\n<p><span style=\"color: #000000;\">150ml d &lsquo;eau<\/span><\/p>\n<p><span style=\"color: #000000;\">500gr de sucre<\/span><\/p>\n<p><span style=\"color: #000000;\">1 c a caf\u00e9 de sirop de glucose<\/span><\/p>\n<p><strong><span style=\"color: #000000;\">Pr\u00e9paration:<\/span><\/strong><\/p>\n<div class=\"separator\"><span style=\"color: #000000;\">Dans une casserole \u00e0 fond \u00e9pais, mettre d&rsquo;abord l\u00a0\u00bbeau, puis le sucre. En effet, si on fait l&rsquo;inverse, on risque d&rsquo;avoir des projections de sucre sur les c\u00f4t\u00e9s de la casserole, ce qui risquerait de le faire cristalliser.<\/span><\/div>\n<div><\/div>\n<div class=\"separator\"><span style=\"color: #000000;\">\u00e0 \u00e9bullition, ajouter la\u00a0cuiller\u00e9e\u00a0a caf\u00e9 de glucose, \u00e0 <b>116\u00b0<\/b>, plongez imm\u00e9diatement la casserole dans le saladier contenant l&rsquo;eau froide,\u00a0Attendez que le sirop soit \u00e0 <b>75\u00b0<\/b>, et fouettez-le avec le batteur muni des crochets (ou bien avec la feuille du p\u00e9trin) pendant 8mn a peux\u00a0pr\u00e8s.<\/span><\/div>\n<div><\/div>\n<div><a href=\"http:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-8623\" src=\"http:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant1-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant1-300x225.jpg 300w, https:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant1-768x576.jpg 768w, https:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant1-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/div>\n<div><\/div>\n<div class=\"separator\"><span style=\"color: #000000;\"> Le sirop va blanchir petit \u00e0\u00a0petit.<\/span><\/div>\n<div><\/div>\n<div><a href=\"http:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-8624\" src=\"http:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant2-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant2-300x225.jpg 300w, https:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant2-768x576.jpg 768w, https:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant2-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/div>\n<div><\/div>\n<div>\n<div class=\"separator\"><span style=\"color: #000000;\">Il faut donc s&rsquo;arr\u00eater de battre d\u00e8s que vous voyez qu&rsquo;il commence un peu \u00e0 durcir, mais pas trop : il doit \u00eatre encore assez chaud.<\/span><\/div>\n<div><\/div>\n<\/div>\n<div>\n<div class=\"separator\"><span class=\"Apple-style-span\" style=\"color: #000000;\">Vous obtenez ainsi une p\u00e2te tr\u00e8s dense, qu&rsquo;il va falloir fraiser : placez la boule de fondant sur votre plan de travail, \u00e9crasez-la avec la paume de la main, puis reformez la boule, et \u00e9crasez-la bien \u00e0 nouveau. Recommencez plusieurs fois jusqu&rsquo;\u00e0 assouplissement de la masse\u00a0<\/span><\/div>\n<div>\n<div class=\"separator\"><span style=\"color: #000000;\">\u00a0<a href=\"http:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant3.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-8625\" src=\"http:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant3-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant3-225x300.jpg 225w, https:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant3-768x1024.jpg 768w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/span><\/div>\n<\/div>\n<\/div>\n<div><span style=\"color: #000000;\">\u00a0<\/span><\/div>\n<div class=\"separator\"><span class=\"Apple-style-span\" style=\"color: #000000;\">Vous obtenez alors une boule assez dense.<\/span><\/div>\n<div><span style=\"color: #000000;\">On utilise le fondant 3 jours apr\u00e8s sa pr\u00e9paration.<\/span><\/div>\n<div><\/div>\n<div><a href=\"http:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant4.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-8626\" src=\"http:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant4-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant4-225x300.jpg 225w, https:\/\/ma-selection-naturelle.com\/wp-content\/uploads\/2018\/06\/fondant4-768x1024.jpg 768w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/div>\n<div><\/div>\n<div class=\"separator\"><span class=\"Apple-style-span\" style=\"color: #000000;\">Vous pourrez conserver ce fondant dans une boite herm\u00e9tique pendant un an et au frais!<\/span><\/div>\n<h3><em><strong><span style=\"color: #000000;\">2-Pour la pr\u00e9paration du sirop :\u00a0<\/span><\/strong><\/em><\/h3>\n<p><span style=\"color: #000000;\"><strong><em>Ingr\u00e9dients:<\/em><\/strong><\/span><\/p>\n<p><span style=\"color: #000000;\">150gr de <strong><em>fondant patissier<\/em><\/strong><\/span><\/p>\n<p><span style=\"color: #000000;\">150gr de sirop de glucose<\/span><\/p>\n<p><span style=\"color: #000000;\">150gr d&rsquo;eau chaude.<\/span><\/p>\n<p><span style=\"color: #000000;\"><strong><em>Pr\u00e9paration:<\/em><\/strong><\/span><\/p>\n<div class=\"separator\"><span style=\"color: #000000;\">Dans une casserole \u00e0 fond \u00e9pais, mettre d&rsquo;abord le fondant, le glucose puis l&rsquo;eau chaude.<\/span><\/div>\n<div class=\"separator\"><span style=\"color: #000000;\">Porter \u00e0 \u00e9bullition jusqu&rsquo;\u00e0 <\/span><b><span style=\"color: #000000;\">105\u00b0 ( ou bien compter 5mn \u00e0 partir de\u00a0l\u2019\u00e9bullition) pus \u00e9teindre le feu.<\/span><\/b><\/div>\n<div><span style=\"color: #000000;\">Il faut utiliser le sirop pour lier la pate. le sirop peut se conserver au r\u00e9frig\u00e9rateur sans soucis. Cette quantit\u00e9 de sirop sera utilis\u00e9e enti\u00e8rement, on pr\u00e9l\u00e8vera l&rsquo;\u00e9quivalent de 2 c a soupe pour l&rsquo;utiliser a coller les fruits secs pour la d\u00e9coration.<\/span><\/div>\n<div><\/div>\n<h3><span style=\"color: #000000;\"><em><strong>3- \u00a0Pate d &lsquo;amande, noisettes et pistaches:<\/strong><\/em><\/span><\/h3>\n<div>\n<ul>\n<li><span style=\"color: #000000;\"><em><strong>Pate d &lsquo;amande:\u00a0<\/strong><\/em><\/span><\/li>\n<\/ul>\n<p><span style=\"color: #000000;\"><strong><em>Ingr\u00e9dients:<\/em><\/strong><\/span><\/p>\n<p><span style=\"color: #000000;\">200gr de poudre amande<\/span><\/p>\n<p><span style=\"color: #000000;\">50gr de sucre glace<\/span><\/p>\n<p><span style=\"color: #000000;\">5-6 c a soupe de sirop (pr\u00e9par\u00e9 pr\u00e9c\u00e9demment)\u00a0<\/span><\/p>\n<p><span style=\"color: #000000;\"><strong><em>Pr\u00e9paration:<\/em><\/strong><\/span><\/p>\n<\/div>\n<div><span style=\"color: #000000;\">&#8211;
